Best way to archive all emails but only show pointers at 90 days?

So here's how our regular litigation policy goes for the vault. Your put on lithold, the vault archives emails that are 90 days old or once you hit 10% of quota. Pretty standard I would imagine. Once your email hits 90 days, the vault removes the email from your mailbox and puts a pointer in it's place to the archived email.

What our Legal team has asked me to do, is archive their entire mailbox but also keep the email in their Outlook, basically just making an archive copy of their mailbox.

Is it possible to archive their entire mailbox, but only show pointers for archived emails that are a certain age? What would be the optimal config for this?

Right now I have a policy set up to archive email based on age, 0 days. I have it set to archive drafts/deleted items. I unchecked to delete original item after archiving, and to create a shortcut to archived item after archiving.  I unchecked the Shortcut header info to show recipient info and selected content of shortcut body to none.

Am I missing anything?
