Best practice to restore EV from tape

Currently we use backupexec (with EV client) to backup our EV server. However I have come to realise recently that we dont actually know how to restore from tape should the server fail. Currently when a vault store closes itself off I copy the flat file structure to HDD. Also There is a daily differential job that runs nightly with a ful at the weekend.

Should the server fail, what would the process be to restore it? We are using EV version 8.0.5.1048. Sorry if this is a bit vauge.
