I'm trying to get a definitive answer as to if the only way for EV search to work in EV 11 with Exchange 2010 is by publishing the EV server itself externally.
Much of what I read indicates it does but it was a little unclear if this is only if NOT using ISA or TMG. There are a couple of forum posts I've found that suggest that with ISA or TMG it isn't necessary to publishe the EV server externally but are not really 100% conclusive.
The last entry from 'LCT' in the link below suggest that ISA and TMG may be able to allow search to work with publishing the EV server externally (admittedly this is for EV10)

And this one is probably the most interesting - as Symantec support seem to be suggesting that any FW that can do web proxying will be able to forward the EV search requests to the EV server without publishing the EV server externally.
